Cantagrullas Farm, founded by Asela and Rubén a decade ago, is dedicated to adding value to raw milk from Castilian breed sheep. Specializing in raw milk cheese, the farm uses innovative maturing techniques that highlight surface flora, producing a range of cheeses with distinct flavors. Their maturing chambers also age cheeses from Quesería Cultivo, making Cantagrullas a hub of innovation in the industry.
With workshops spread across three Spanish regions, including Félix Iniesta, Granja Cantagrullas, and La Cuerre, they produce cheeses from both sheep’s and cow’s milk. Their portfolio includes traditional varieties like Manchego and Gamoneu, as well as unique creations influenced by international cheese-making techniques.
Cantagrullas collaborates closely with small producers, refining white cheeses in their caves using native yeasts and molds, resulting in one-of-a-kind sensory experiences. This commitment to quality and innovation has led to continuous improvements in both production and aging processes, elevating the standards of cheese-making in Spain.

Requiring 200,000 flowers to produce just one kilogram, saffron is often referred to as “red gold.” Its prized qualities have made it a key ingredient in iconic Spanish dishes like Paella and Fabada, as well as in sweets and liqueurs worldwide. La Mancha saffron, with its Protected Designation of Origin, stands out for its high coloring power, strong aroma, and premium quality.
La Mancha saffron is harvested with care and sold in threads, never ground, ensuring the highest quality for consumers.
